Listen up chocolate lovers, you need to try this recipe.
Nanaimo or Maraima Bars
1/2 cup soft butter
1/3 cup granulated sugar
1/3 cup cocoa
1 tsp vanilla
1 egg, slightly beaten
Place in double boiler; stir well until mixture resembles thin custard.
Then Add:
2 cups graham crackers crumb (my Mom used cinnamon graham crackers and I thought it was good)
1/2 cup chopped nuts
1 cup coconut (mom left this out, we don’t like dried coconut)
Blend well and pack into 9 in pan.
Spread the following on top after mixing well:
1/4 cup butter
2 Tbsp. Instant Vanilla pudding (Mom used chocolate, we did not have vanilla)
3 Tbsp. Cream
2 cup powdered sugar
Let harden 15 minutes. Melt 4 squares semi-sweet chocolate with 1 tablespoon butter and spread over custard icing. Let set. Cut in bars.

It just occurred to me... am I the only one who doesn't know what nanaimo or maraima mean or what they refer to???

I had to ask my mom. One of her water aerobic buddies gave her the recipe. It is a place, a town. at first I thought is was in WA, but I think after searching, it is a town around Vancouver, BC. So, we have both learned something today :)
Nanaimo is a large town on Vancouver Island just across the Georgia Strait from Vancouver. As you can probably guess, Nanaimo (pronounced "na-NI-mo") bars are standard fare in his corner of the continent!
Thank you Andrea for clearing that up. Mom says her friend says these bars were very popular in the past, I guess they are making a comeback in Edmonds.
Having been in Canada for 5 years I've still yet to taste this unofficial national sweet. This recipe looks really yummy (and the pic is a big selling point, too). Uhm, so what's the calorie count?
Oh my god! There is a scene in "A Mighty Wind" (one of my favorite movies) where a character talks about making Nanaimo bars. I HAVE to make these!!
Mom made more using Vanilla Pudding, and they were very good. Calories? Paula, oh, I am sure not very many ;)
